We start cooking the fresh octopus in a pressure cooker with a glass of water and salt for about 15-20 minutes.<\/p>\n

Failure to have a fresh octopus, no problem, we better with a bag of frozen octopus cut, make sure to defrost in time and so far we do not worry over it, because we add at the end.<\/p>\n

Add the rice to cook in a pot with water and salt (we left about 12-15 minutes).<\/p>\n

While rice is cooking, chop the garlic cloves with green pepper and onions and two poached in a frying pan with olive oil over medium heat with a pinch of salt. It is convenient to use a deep frying pan or a large pot, as we will enter all the ingredients in it.<\/p>\n

When the vegetables are poached then add the peas and rice, adding a little paprika and stir well.<\/p>\n

Then add a glass of white wine and two fish broth or water or, if we cooked fresh octopus, we add the stock we have left in the pot.<\/p>\n

Remove and let the rice boil for about 5 minutes while you prepare the octopus (Octopus cool if we cut into slices).<\/p>\n

Add the slices of octopus on rice and we put the casserole in the oven at 200 \u00ba for about 10-12 minutes.<\/p>\n
